Ingredients
  

For the muffins:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped apples peeled
  • 1/2 cup milk

For the streusel topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup cold butter diced
  • 1/2 teaspoon cinnamon

Instructions
  

Preheat Oven

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease lightly.

Prepare Streusel

  • In a small bowl, mix flour, brown sugar and cinnamon. Cut in cold butter until mixture is crumbly. Set aside.

Mix Dry Ingredients

  • In a medium bowl, combine flour, baking powder, baking soda, salt and cinnamon. Stir to blend.

Mix Wet Ingredients

  • In another bowl, whisk eggs, oil, milk, vanilla, granulated sugar and brown sugar until smooth.

Combine Wet & Dry

  • Gently fold dry ingredients into wet ingredients. Mix until just combined; do not overmix.

Add Apples

  • Fold chopped apples into the batter carefully, ensuring even distribution. Batter should remain fluffy.

Fill Muffin Cups

  • Spoon batter into muffin cups about 2/3 full. This ensures muffins rise properly.

Add Streusel

  • Sprinkle prepared streusel evenly over each muffin for a crunchy, sweet topping.

Bake Muffins

  • Bake for 22–25 minutes or until a toothpick inserted comes out clean. Muffins should be golden brown.

Cool and Serve

  • Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.
