Instructions
Activate the yeast
Mix warm water and sugar in a small bowl. Sprinkle yeast on top. Let it sit for 5–10 minutes until foamy.
Make the dough
In a large bowl, combine flour and salt. Pour yeast mixture. Mix until dough forms and becomes elastic.
Knead the dough
Knead on floured surface for 8–10 minutes. Dough should be smooth, soft, and slightly sticky.
First rise
Place dough in a lightly oiled bowl. Cover with a towel. Let it rise for 1 hour until it doubles in size.
Shape the bagels
Divide dough into 6 equal pieces. Roll each into a ball. Poke a hole in the center with your finger. Stretch gently.
Second rise
Place shaped bagels on parchment paper. Cover and let them rise for 20 minutes. They should puff slightly.
Preheat oven
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Boil the bagels
Boil water in a large pot. Add malt syrup or sugar. Boil bagels 1–2 minutes per side using a slotted spoon.
Add toppings
Remove from water. Place on parchment paper. Sprinkle sesame, poppy, or everything seasoning on top.
Bake the bagels
Bake in preheated oven for 20–25 minutes until golden brown. Check bottom for doneness.
Cool the bagels
Transfer to cooling rack. Let cool 10–15 minutes before slicing.
Serve and enjoy
Serve warm with cream cheese, butter or smoked salmon. Store leftovers in airtight container.
Notes
Use high-gluten flour for chewy texture.
Do not overboil; 1–2 minutes per side is enough.
