Instructions
  

Prepare Chicken and Vegetables

  • Heat butter in a Dutch oven over medium heat. Add onions, carrots, celery and garlic. Sauté for 5 minutes until fragrant.

Add Chicken and Broth

  • Place chicken thighs in pot. Pour in chicken broth and sprinkle thyme, salt and pepper. Bring to a gentle boil.

Simmer Chicken

  • Reduce heat to low. Cover and simmer for 30 minutes, until chicken is cooked through and vegetables are tender.
