Ingredients

  • 1 pound Brussels sprouts trimmed and thinly sliced
  • 1/3 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup chopped almonds or walnuts
  • 1/4 cup dried cranberries optional
  • 1 small garlic clove minced

Instructions

Prepare the Brussels sprouts

  • Wash and trim Brussels sprouts. Slice them very thin using a knife or mandoline for best texture.

Make the dressing

  • In a bowl, whisk olive oil, lemon juice, Dijon mustard, honey, garlic, salt and black pepper until smooth.

Toss sprouts with dressing

  • Place shaved Brussels sprouts in a large bowl. Pour dressing over them and mix well.

Massage the salad

  • Use clean hands to gently massage sprouts for two to three minutes. This makes them softer and flavorful.

Add cheese

  • Sprinkle grated Parmesan cheese over the salad. Mix gently so it spreads evenly.

Add crunch ingredients

  • Add chopped almonds or walnuts. Mix again for added crunch and texture.

Add optional fruits

  • If using, add dried cranberries for a sweet contrast. Stir lightly.

Rest the salad

  • Let the salad sit for five to ten minutes. This helps flavors blend together nicely.

Taste and adjust

  • Taste the salad and adjust salt, lemon or honey if needed.

Serve fresh

  • Serve immediately for best crunch and freshness. Enjoy as a side or light meal.

Notes

  • Use a mandoline for very thin slices
  • Add bacon bits for a smoky flavor
  • Use apple slices for sweetness
  • Replace almonds with pecans or sunflower seeds
  • Add grilled chicken for a full meal
  • Use maple syrup instead of honey
  • Chill before serving for extra freshness
  • Add feta cheese for a tangy twist
