Ingredients
  

For the Cake:

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups freshly grated carrots
  • ½ cup crushed pineapple drained
  • ½ cup chopped walnuts optional

For the Cream Cheese Frosting:

  • 8 ounces cream cheese softened
  • ½ cup unsalted butter softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
  

Prepare the Pans

  • Preheat oven to 350°F. Grease cake pans and line bottoms with parchment paper.

Mix Dry Ingredients

  • In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg and salt until well combined.

Combine Sugars and Oil

  • In another bowl, mix granulated sugar, brown sugar and oil until smooth and blended.

Add Eggs and Vanilla

  • Add eggs one at a time. Mix well after each addition. Stir in vanilla extract.

Add Dry Mixture

  • Slowly add dry ingredients to wet mixture. Stir gently until just combined.

Fold in Carrots and Pineapple

  • Add grated carrots, crushed pineapple and walnuts. Fold gently to keep batter light.

Bake the Cake

  • Divide batter evenly into pans. Bake for 35–40 minutes until toothpick comes out clean.

Cool Completely

  • Let cakes cool in pans for ten minutes. Remove and cool fully on rack.

Make the Frosting

  • Beat cream cheese and butter until smooth. Add powdered sugar gradually. Mix in vanilla.

Frost the Cake

  • Place one layer on plate. Spread frosting on top. Add second layer and frost completely.

Decorate

  • Sprinkle chopped walnuts or pipe decorative swirls if desired. Chill before slicing.
