Ingredients
  

For Cake:

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1/2 cup crushed pineapple drained
  • 1/2 cup chopped walnuts optional
  • 1 teaspoon vanilla extract

For Frosting:

  • 8 oz cream cheese softened
  • 1/2 cup butter softened
  • 2 cups powdered sugar
  • 1 cup marshmallow fluff
  • 1 teaspoon vanilla extract

Instructions
  

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease and line cake pans with parchment paper.

Mix Dry Ingredients

  • In a bowl, combine flour, sugar, baking soda, baking powder, salt and cinnamon. Mix well.

Mix Wet Ingredients

  • In another bowl, whisk oil, eggs and vanilla extract until smooth and well blended.

Combine Mixtures

  • Slowly add dry ingredients into wet mixture. Mix gently until just combined. Do not overmix.

Add Carrots and Extras

  • Fold in grated carrots, pineapple and walnuts. Mix gently to keep batter light and fluffy.
