Ingredients
  

  • 4 chicken breasts boneless, skinless
  • 1 cup flour
  • 2 eggs
  • 1 cup breadcrumbs preferably fresh or panko
  • ½ cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup oil for frying
  • Lemon wedges for serving
  • Fresh parsley optional

Instructions
  

Prepare chicken

  • Pound chicken breasts to even thin thickness.

Set up coating station

  • Place flour in one bowl, beaten eggs in another and breadcrumbs mixed with parmesan and spices in a third.

Coat chicken

  • Dip chicken in flour, then egg, then breadcrumbs mixture.

Heat oil

  • Heat oil in a pan over medium heat.

Drain oil

  • Place cooked chicken on paper towels.

Rest briefly
