For the Chicken

  • 2 pounds chicken breasts or thighs
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Grilled Poblanos

  • 3 poblano peppers

For BBQ Onions

  • 2 large onions sliced
  • 2 tablespoons butter
  • 1/3 cup BBQ sauce

For Serving

  • 12 small tortillas
  • Sour cream
  • Fresh cilantro
  • Lime wedges
  • Shredded cheese

Instructions
  

Season the chicken

  • Rub chicken with olive oil and spices.

Grill the poblanos

  • Grill poblano peppers until charred. Peel and slice them.

Cook onions

  • Melt butter in a skillet and cook onions until soft.

Add BBQ sauce

  • Stir BBQ sauce into onions and cook until sticky.

Grill chicken

  • Cook chicken for 6–8 minutes per side until fully cooked.

Slice chicken

  • Let chicken rest, then slice into strips.

Warm tortillas
