Ingredients
  

  • 3 cups cooked rice cold, leftover works best
  • 2 tbsp vegetable oil
  • 1 tbsp sesame oil
  • 2 garlic cloves finely chopped
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp chili sauce optional
  • 2 spring onions chopped
  • 1 tsp sesame seeds
  • Salt to taste
  • Black pepper to taste
  • Fresh herbs for garnish optional

Instructions
  

Prepare the rice

  • Break cold rice with hands or fork. Remove lumps and separate grains gently.

Heat the pan

  • Place pan on medium heat. Add vegetable oil and sesame oil together.

Add garlic

  • Add chopped garlic. Fry for few seconds until light golden and fragrant.

Add rice

  • Add rice to pan. Spread it evenly across the surface.

Press the rice

  • Press rice down using spatula. Form a flat layer in the pan.

Cook without stirring

  • Let rice cook for five minutes without stirring for crispy bottom.

Flip the rice

  • Flip rice in sections. Cook other side until golden and crispy.

Add sauces

  • Add soy sauce, rice vinegar and chili sauce. Mix gently.

Add seasoning

  • Add salt and black pepper. Mix lightly without breaking crispy texture.

Add toppings

  • Add spring onions and sesame seeds. Mix gently.

Final crisp

  • Cook one more minute for extra crunch.

Serve hot

  • Remove from pan. Serve hot and fresh.
