Ingredients
  

  • 2 large eggplants sliced
  • 2 cups tomato sauce
  • 1 1/2 cups mozzarella cheese shredded
  • 1/2 cup Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried basil or oregano

Instructions
  

Prepare the eggplant

  • Slice eggplants and sprinkle with salt. Let them sit for 15 minutes, then pat dry with paper towels.

Cook the eggplant

  • Heat olive oil in a pan. Lightly cook eggplant slices until slightly golden on both sides.

Prepare the sauce

  • In a pan, sauté garlic in olive oil. Add tomato sauce, salt, pepper and herbs. Simmer briefly.

Layer the dish

  • Spread a layer of sauce in a baking dish. Add eggplant slices on top evenly.

Add cheese layer

  • Sprinkle mozzarella and Parmesan cheese over eggplant. This adds richness and flavor.

Repeat layers

  • Continue layering sauce, eggplant and cheese until all ingredients are used.

Bake the dish

  • Bake at 180°C for 30–35 minutes until cheese is melted and golden on top.

Rest and serve

  • Let it cool for 10 minutes before serving. This helps layers set properly.
