Instructions
  

Wash and Peel Potatoes

  • Wash potatoes well and peel them if you prefer smooth fries.

Cut into Strips

  • Cut potatoes into even thin strips for uniform cooking.

Soak in Water

  • Place potato strips in cold water for 30 minutes to remove starch.

Dry Completely

  • Remove potatoes and dry them thoroughly with paper towels.

Heat Oil

  • Heat oil in a deep pot to 325°F for first frying stage.

First Fry

  • Fry potatoes in small batches for 4 to 5 minutes until soft but not brown.

Rest Fries

  • Remove fries and place on paper towels to cool completely.

Increase Heat

  • Heat oil to 375°F for second frying stage.

Second Fry

  • Fry potatoes again until golden brown and crispy, about 2 to 3 minutes.

Drain Oil

  • Remove fries and drain on paper towels to remove excess oil.

Season Immediately

  • Sprinkle salt, pepper, paprika and garlic powder while fries are hot.

Serve Hot
