Ingredients
  

  • 2 pounds small red potatoes
  • 6 slices bacon chopped
  • 1 small onion finely chopped
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley chopped

Instructions
  

Boil the potatoes

  • Place potatoes in a large pot with salted water. Boil until tender but firm. Drain and let them cool slightly.

Slice the potatoes

  • Cut warm potatoes into bite-sized pieces. Keep them slightly chunky so they do not break apart easily.

Cook the bacon

  • Heat a skillet over medium heat. Add chopped bacon and cook until crispy. Remove and set aside.

Cook the onion

  • In the same skillet, add chopped onion to the bacon fat. Cook until soft and lightly golden.

Make the dressing

  • Add vinegar, mustard, sugar, salt and pepper into the skillet. Stir well and let it heat for one minute.

Add olive oil

  • Pour in olive oil and mix until the dressing becomes smooth and slightly thick.

Combine potatoes and dressing

  • Add warm potatoes into the skillet. Toss gently so all pieces are coated with dressing.

Add bacon
