Ingredients

  • 2 tablespoons olive oil
  • 1.5 pounds beef or pork cubed
  • 1 large onion chopped
  • 4 garlic cloves minced
  • 2 cups roasted green chiles chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin powder
  • 1 teaspoon oregano
  • 2 tablespoons flour
  • 4 cups chicken broth
  • 2 medium potatoes diced
  • 1 cup corn kernels
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

Heat the oil

  • Heat olive oil in a large pot over medium heat. Let it warm before adding the meat for even cooking.

Brown the meat

  • Add meat cubes to the pot. Cook until brown on all sides. This step adds deep flavor.

Add onion

  • Add chopped onion to the pot. Cook until soft and light golden in color.

Add garlic

  • Add minced garlic and stir well. Cook for one minute until fragrant and aromatic.

Add green chiles

  • Add chopped roasted green chiles. Stir slowly to mix with meat and onions.

Season the base

  • Add salt, black pepper, cumin and oregano. Stir well to coat all ingredients.

Add flour

  • Sprinkle flour over the mixture. Stir gently to thicken the stew base evenly.

Pour broth

  • Slowly add chicken broth while stirring. This prevents lumps and creates smooth texture.

Add potatoes

  • Add diced potatoes to the pot. These make the stew thick and filling.

Simmer gently

  • Reduce heat and let stew simmer. Cover and cook for forty-five minutes slowly.

Add corn

  • Add corn kernels to the stew. Stir gently and cook for ten more minutes.

Finish with lime

  • Add lime juice for fresh taste. Stir gently before turning off heat.

Garnish

  • Top with fresh cilantro. Serve hot and enjoy every spoonful.
