Ingredients
  

  • 2 pounds beef chuck cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 2 large onions chopped
  • 3 cloves garlic minced
  • 2 red bell peppers chopped
  • 2 tablespoons sweet paprika
  • 1 tablespoon smoked paprika
  • 1 teaspoon caraway seeds optional
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons flour optional, for thickening
  • 2 tablespoons sour cream optional, for serving
  • Fresh parsley for garnish

Prepare Ingredients

  • Chop onions, garlic and bell peppers. Cut beef into 1-inch cubes. Set aside.

Sear Beef

  • Heat oil in a Dutch oven over medium-high heat. Brown beef cubes on all sides. Remove and set aside.

Sauté Onions and Garlic

  • In the same pot, sauté onions until soft, then add garlic for 1 minute.

Add Peppers and Paprika

  • Stir in chopped peppers, sweet paprika, smoked paprika and caraway seeds.

Add Tomato Paste

  • Mix in tomato paste and cook 1–2 minutes to deepen flavor.

Return Beef

  • Add browned beef back to the pot and stir well to coat with spices.

Add Broth

  • Pour in beef broth. Stir, scraping up any browned bits from the bottom.

Season

  • Add salt and black pepper. Bring to a boil, then reduce heat to low.

Simmer

  • Cover and simmer gently for 1 1/2 to 2 hours, until beef is tender.

Optional Thickening

  • If needed, mix 2 tablespoons flour with a bit of water and stir in to thicken the sauce.

Serve

  • Ladle goulash into bowls, garnish with sour cream and parsley. Serve with bread, noodles or potatoes.

Notes

  • Use both sweet and smoked paprika for authentic flavor.
  • Add a splash of red wine for extra depth.
  • Include potatoes or carrots for a heartier stew.
  • Cook low and slow for tender beef.
  • Serve with egg noodles, mashed potatoes, or crusty bread.
