Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 small onion finely chopped
  • 1 medium carrot grated
  • 3 cloves garlic minced
  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang Korean chili paste
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons ketchup for topping
  • 1 tablespoon brown sugar for topping
  • 1 teaspoon rice vinegar for topping

Instructions

Preheat the Oven

  • Preheat oven to 180°C or 350°F. This ensures even baking and perfect texture for the meatloaf.

Prepare the Loaf Pan

  • Grease a loaf pan lightly with oil or line with parchment paper. This prevents sticking and makes cleanup easy.

Mix the Breadcrumbs and Milk

  • In a small bowl, combine breadcrumbs and milk. Let sit for 5 minutes until soft.

Combine the Meat

  • In a large bowl, mix ground beef and pork together. This creates a rich and tender meatloaf base.

Add Vegetables and Seasonings

  • Add onion, carrot, garlic, soy sauce, gochujang, sesame oil, egg, salt and pepper. Mix until fully combined.

Add Breadcrumb Mixture

  • Add soaked breadcrumbs to meat mixture. Stir gently to incorporate without overworking the meat.

Shape the Meatloaf

  • Transfer mixture to the loaf pan. Press evenly and smooth the top for uniform cooking.

Prepare the Glaze

  • In a small bowl, mix ketchup, brown sugar and rice vinegar. Brush over the top of meatloaf.

Bake the Meatloaf

  • Place in preheated oven and bake for 45-50 minutes. Meatloaf should be cooked through and slightly caramelized on top.

Rest and Serve

  • Let meatloaf rest 10 minutes before slicing. This keeps it moist and helps maintain shape while serving.

Notes

  • Use a mix of ground beef and pork for better texture.
  • Adjust gochujang for more or less spiciness.
  • Add finely chopped bell peppers for extra flavor.
  • Top with extra glaze halfway through baking for caramelized finish.
  • Serve with steamed rice or roasted vegetables for complete meal.
  • Make mini meatloaves for individual servings.
  • Garnish with sesame seeds or chopped green onions.
