Ingredients

  • 8 –10 Fresno chiles sliced thin
  • 1 cup white vinegar
  • 1 cup water
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 3 garlic cloves sliced
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1 bay leaf

Instructions

Prepare the Chiles

  • Wash Fresno chiles thoroughly under clean water. Slice them into thin rounds using a sharp knife carefully.

Prepare the Jar

  • Sterilize a glass jar using hot water. Let it dry completely before adding ingredients for safe storage.

Add Chiles to Jar

  • Place sliced Fresno chiles into the jar evenly. Add garlic slices for extra flavor and aroma inside.

Add Spices

  • Add black peppercorns, mustard seeds and bay leaf. These spices add depth and balance to the pickling flavor.

Make the Pickling Liquid

  • Pour vinegar, water, sugar and salt into a saucepan. Stir well until sugar and salt dissolve completely.

Heat the Mixture

  • Bring the liquid to a gentle boil. Stir occasionally so everything blends smoothly and evenly together.

Pour Over Chiles

  • Carefully pour hot liquid into the jar. Make sure all chiles are fully covered with pickling brine.

Remove Air Bubbles

  • Tap the jar lightly on the counter. This helps remove trapped air and ensures proper preservation.

Cool the Jar

  • Let the jar cool at room temperature. Do not close tightly until it reaches room temperature.

Seal and Store

  • Close the lid tightly once cooled. Store in the refrigerator for best flavor and freshness.

Rest for Flavor

  • Let chiles rest at least 2–4 hours. Overnight resting gives stronger and deeper pickled flavor.

Serve and Enjoy

  • Use pickled Fresno chiles on tacos, burgers, eggs or grilled meats for extra spicy tangy flavor.

Notes

  • Slice chiles evenly for consistent pickling.
  • Add carrots for extra crunch and sweetness.
  • Use apple cider vinegar for milder flavor.
  • Add red onions for extra depth.
  • Adjust sugar for sweeter or tangier taste.
  • Keep jar fully covered for safety.
  • Let sit overnight for best results.
  • Use gloves when handling hot chiles.
  • Add lime zest for fresh citrus note.
  • Store in glass jars only.
