Ingredients
  

  • 1 large red onion thinly sliced
  • 1/2 cup white vinegar
  • 1/2 cup water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black peppercorns
  • 1/2 teaspoon red pepper flakes optional

Instructions
  

Prepare Onion

  • Peel and thinly slice the red onion. Place in a medium heatproof bowl or jar.

Make Pickling Liquid

  • In a small saucepan, combine vinegar, water, sugar, salt, peppercorns and red pepper flakes. Heat over medium until sugar dissolves and liquid is warm.

Pour Over Onions

  • Pour the warm pickling liquid over sliced onions, making sure they are fully submerged.

Pickle

  • Let sit at room temperature for at least 30 minutes for quick pickling. For deeper flavor, cover and refrigerate for several hours or overnight.

Serve

  • Use as a topping for tacos, burgers, sandwiches or salads.

  • Add a few sprigs of fresh herbs like thyme or rosemary for extra flavor
