Ingredients
  

  • 1 standing rib roast 6–8 pounds
  • 3 tablespoons olive oil
  • 6 garlic cloves minced
  • 2 tablespoons fresh rosemary chopped
  • 2 tablespoons fresh thyme chopped
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon Dijon mustard

Instructions
  

Prepare the roast

  • Remove the roast from the fridge 1 hour before cooking. Pat it dry.

Make seasoning rub

  • Mix olive oil, garlic, rosemary, thyme, mustard, salt and pepper in a bowl.

Season the meat

  • Rub the mixture all over the standing rib roast evenly.

Preheat the oven

  • Heat oven to 450°F for a strong initial roast.

Start roasting

  • Place roast in a roasting pan and cook for 20 minutes.

Lower the heat

  • Reduce oven temperature to 325°F and continue roasting until desired doneness.

Check temperature

  • Use a thermometer. Remove roast at 120°F for rare or 130°F for medium-rare.

Rest and serve

  • Cover loosely with foil and rest for 20 minutes before slicing.

Notes

  • Use bone-in roast for better flavor
  • Let meat reach room temperature first
