Ingredients
  

  • 1 kg sweet potatoes thinly sliced
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • 2 cups heavy cream
  • 1 cup milk
  • 1 cup shredded Gruyère or cheddar cheese
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon thyme dried or fresh
  • ¼ teaspoon nutmeg
  • 2 tablespoons parmesan cheese optional, for topping

Instructions
  

Preheat the oven

  • Set oven to 180°C. Grease a baking dish with butter to prevent sticking.

Slice sweet potatoes

  • Cut sweet potatoes into thin, even slices for smooth and even cooking.

Cook garlic

  • In a saucepan, melt butter and sauté garlic until fragrant but not browned.

Add cream mixture

  • Pour in cream and milk. Add salt, pepper, thyme and nutmeg. Stir well.

Layer sweet potatoes

  • Place a layer of sliced sweet potatoes in the baking dish.

Add sauce and cheese

  • Pour some cream mixture over potatoes and sprinkle cheese.

Repeat layers

  • Continue layering potatoes, sauce, and cheese until finished.

Bake covered

  • Cover with foil and bake for 45 minutes until potatoes soften.

Bake uncovered

  • Remove foil and bake for another 15 minutes until golden and bubbly.

Rest and serve

  • Let it rest for 10 minutes before serving for best texture.
