Ingredients

  • 2 pounds ground beef
  • 1 cup bread crumbs
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 cup milk
  • 2 large eggs
  • ½ cup ketchup plus extra for topping
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 2 tablespoons fresh parsley chopped for garnish

Instructions

Preheat Oven

  • Preheat your oven to 350°F (175°C). Grease a loaf pan lightly with oil or cooking spray.

Prepare the Meat Mixture

  • In a large mixing bowl, combine ground beef, bread crumbs, chopped onion, garlic, milk, eggs, salt, pepper and dried herbs.

Mix Thoroughly

  • Use your hands or a spoon to mix ingredients until evenly combined. Avoid overmixing to keep meatloaf tender.

Shape the Meatloaf

  • Transfer the mixture into the loaf pan. Press gently to shape into a uniform loaf, making sure it fits snugly in the pan.

Add Glaze

  • Spread a thin layer of ketchup over the top of the meatloaf. This glaze will caramelize while baking for flavor and color.

Bake the Meatloaf

  • Place the loaf pan in the preheated oven. Bake for 50–60 minutes or until internal temperature reaches 160°F (71°C).

Rest the Meatloaf

  • Remove from oven and let the meatloaf rest for 10 minutes. This allows juices to redistribute and keeps it moist.

Slice and Serve

  • Carefully slice the meatloaf with a sharp knife. Garnish with fresh parsley and serve with your favorite sides.

Notes

  • Use a mix of beef and pork for richer flavor.
  • Add shredded carrots or zucchini for extra moisture and nutrition.
  • Substitute ketchup glaze with barbecue sauce for a different flavor.
  • Use panko bread crumbs for a lighter texture.
  • Avoid overmixing to keep the meatloaf tender.
  • Let the meatloaf rest before slicing to retain juices.
  • Serve with mashed potatoes or roasted vegetables for a complete meal.
