Ingredients
  

  • 2 cups grated butternut squash
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons chopped parsley
  • Oil for frying

Instructions
  

Prepare the Squash

  • Grate the butternut squash using a grater. Squeeze out extra water using your hands or a clean cloth.

Mix Ingredients

  • Place squash in a bowl. Add eggs, flour, onion, garlic, salt, pepper, paprika and parsley. Mix well until combined.

Heat the Oil

  • Heat oil in a frying pan over medium heat. Make sure the oil is hot but not smoking.

Shape the Fritters

  • Take small portions of mixture. Shape into small patties using your hands or a spoon.

Fry the Fritters

  • Place fritters in hot oil carefully. Fry for 3–4 minutes on each side until golden brown and crispy.

Remove and Drain

  • Take fritters out and place on paper towels. This removes extra oil and keeps them crispy.

Serve Hot

  • Serve fritters warm. Enjoy crispy outside and soft inside texture with your favorite dip.
