  • 2 tablespoons balsamic vinegar
  • 3 garlic cloves minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried rosemary
  • ½ teaspoon kosher salt

  • Fresh parsley

Instructions
  

Prepare The Marinade

  • Whisk together the soy sauce, Worcestershire sauce, brown sugar, balsamic vinegar, garlic, mustard and seasonings.

Marinate The Beef

  • Place the tri-tip in a large bag and pour the marinade over it. Refrigerate overnight.

Remove From Refrigerator

  • Take the beef out about thirty minutes before grilling.

Preheat The Grill

  • Heat the grill to medium-high and lightly oil the grates.

Pat Dry

  • Remove excess marinade from the beef with paper towels.

Sear The Meat

  • Grill the tri-tip for about five minutes on each side to develop a flavorful crust.

Continue Cooking

  • Move the beef to indirect heat and cook until the internal temperature reaches your preferred doneness.

Check The Temperature

  • Cook to about 130°F for medium-rare or 140°F for medium.

Rest The Beef

  • Cover loosely with foil and let the meat rest for ten minutes.

Slice Correctly

  • Cut the tri-tip thinly against the grain for maximum tenderness.
