Ingredients
  

  • 4 cups finely shredded green cabbage
  • 1 cup shredded carrots
  • ¼ cup thinly sliced red onion
  • ½ cup mayonnaise or Greek yogurt
  • 2 tablespoons apple cider vinegar or lemon juice
  • 1 tablespoon honey or sugar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon Dijon mustard optional
  • 2 tablespoons chopped fresh parsley or cilantro optional

Instructions
  

Prepare Vegetables

  • Shred the cabbage and carrots. Slice red onion thinly. Use a knife or food processor for even pieces.

Make the Dressing

  • In a small bowl, whisk together mayonnaise or yogurt, vinegar, honey, salt, pepper and optional Dijon mustard.

Combine Vegetables and Dressing

  • Pour the dressing over the shredded cabbage, carrots and onion. Toss well to coat all vegetables evenly.
