Ingredients
  

  • 2 cups orzo pasta
  • 2 tablespoons olive oil
  • 1 zucchini chopped
  • 1 bell pepper chopped
  • 1 cup cherry tomatoes halved
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/2 cup cream or milk
  • 1/4 cup fresh parsley chopped

Instructions
  

Preheat the Oven

  • Preheat your oven to 375°F. Grease a baking dish lightly to prevent sticking.

Cook Orzo

  • Boil orzo in salted water according to package instructions. Drain and set aside.

Cook Vegetables

  • Heat olive oil in a pan. Add zucchini, bell pepper and tomatoes. Cook for 5 minutes until soft.

Add Garlic

  • Add garlic and cook for one minute until fragrant but not burned.

Mix Ingredients

  • In a large bowl, combine cooked orzo, vegetables, salt, pepper and oregano.

Add Cheese and Cream

  • Stir in mozzarella, parmesan and cream. Mix until everything is well combined.

Transfer to Dish

  • Pour mixture into the baking dish. Spread evenly with a spoon.

Bake the Dish

  • Bake for 20–25 minutes until cheese is melted and top is golden.

Cool Slightly

  • Let it rest for 5–10 minutes before serving. This helps it set.

Garnish and Serve

  • Sprinkle fresh parsley on top and serve warm.
