Ingredients
  

  • 2 cups masa harina
  • 1 1/4 cups warm water
  • 1 cup cooked chicken shredded
  • 1/2 cup shredded cheese mozzarella or queso fresco
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cumin optional
  • Vegetable oil for cooking
  • Curtido pickled cabbage for serving
  • Salsa roja or tomato sauce for serving

Instructions
  

Prepare the Dough

  • In a large bowl, combine masa harina, salt and warm water. Mix until smooth and soft but not sticky.

Season the Chicken

  • In a separate bowl, mix shredded chicken with black pepper and cumin. Ensure chicken is evenly seasoned.

Mix Cheese and Chicken

  • Add shredded cheese to the seasoned chicken. Stir until the mixture is uniform and ready to stuff.

Divide the Dough

  • Divide the dough into small balls, about the size of a golf ball and flatten slightly with your hands.

Stuff the Pupusas

  • Make a small indentation in each dough ball. Place 1–2 tablespoons of chicken-cheese mixture inside.

Seal the Pupusas

  • Carefully fold the edges over the filling, pinch to seal and gently flatten to form a round tortilla.

Heat the Skillet

  • Heat a skillet or griddle over medium heat. Add a few drops of vegetable oil to prevent sticking.

Cook the Pupusas

  • Place pupusas on the skillet. Cook 3–4 minutes per side until golden brown and cooked through.

Check for Doneness

  • The pupusas should be crispy outside but soft inside. Cheese should be melted, and chicken warm.

Serve Hot

  • Serve immediately with curtido and salsa roja. Enjoy the pupusas warm for best flavor.

  • Use fresh masa harina for authentic flavor.
  • Try different cheeses like queso fresco, cheddar, or Monterey Jack.
  • Add sautéed onions or peppers to the chicken filling for extra taste.
