Ingredients
  

  • 3 cups snap peas trimmed
  • 2 tablespoons chili crisp sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon toasted sesame seeds
  • 1/4 cup chopped peanuts optional
  • 1 tablespoon chopped fresh cilantro or mint
  • Salt to taste

Instructions
  

Boil Water

  • Bring a pot of salted water to a boil for blanching snap peas.

Prepare Ice Bath

  • Fill a bowl with ice water to stop cooking after blanching.

Blanch Snap Peas

  • Add snap peas to boiling water for 1–2 minutes until bright green and crisp.

Shock in Ice

  • Immediately transfer snap peas to ice bath. Cool completely to retain crunch.

Drain Snap Peas

  • Drain well in a colander. Pat dry with paper towels.

Make Dressing

  • In a small bowl, combine chili crisp, soy sauce, rice vinegar and sesame oil. Whisk well.

Toss Salad

  • Place snap peas in large mixing bowl. Pour dressing over them and toss gently to coat.

Add Nuts and Seeds

  • Sprinkle toasted sesame seeds and chopped peanuts over salad. Mix lightly.

Add Herbs

  • Add chopped cilantro or mint. Toss briefly for fresh flavor.

Serve Fresh

  • Transfer to a serving bowl and enjoy immediately for best crunch and flavor.
