Ingredients
  

  • 500 g chicken breast or thighs cut into bite-sized pieces
  • 2 tbsp vegetable oil
  • 1 onion chopped
  • 3 garlic cloves minced
  • 1 inch ginger grated
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 tsp white pepper
  • Salt to taste
  • 1 tsp cornstarch mixed with 2 tbsp water optional for thickening
  • Fresh cilantro for garnish

Instructions
  

Heat Oil in Skillet

  • Add vegetable oil to a large skillet or wok. Heat on medium flame until shimmering.

Sauté Onion, Garlic, and Ginger

  • Add chopped onion, minced garlic and grated ginger. Cook until soft and fragrant.

Add Chicken Pieces

  • Put chicken in the skillet. Stir-fry for 5 minutes until lightly browned.

Add Bell Peppers

  • Add red and green bell peppers. Stir-fry for 2 minutes to soften slightly.

Pour Coconut Milk

  • Add coconut milk to the chicken and vegetables. Stir gently to combine.

Add Soy Sauce and Oyster Sauce

  • Pour soy sauce, oyster sauce, sugar and white pepper. Mix well.

Simmer Until Tender

  • Lower the heat. Cover and cook for 10–12 minutes until chicken is fully cooked.

Optional Thickening

  • Add cornstarch-water mixture if you want a thicker sauce. Stir gently for 2 minutes.

Garnish and Serve

  • Turn off the heat. Garnish with fresh cilantro. Serve hot with steamed rice or noodles.

Notes

  • Use chicken thighs for juicier meat instead of breast.
  • Adjust sugar and soy sauce to your taste preference.
  • Add mushrooms or snap peas for extra texture and flavor.
  • Coconut cream can replace coconut milk for a richer sauce.
  • Serve with jasmine rice for a classic combination.
