Ingredients
  

  • 3 cups all-purpose flour
  • 2 ¼ teaspoons instant yeast
  • ¼ cup sugar
  • ½ teaspoon salt
  • 3 large eggs
  • ¾ cup warm milk
  • ½ cup unsalted butter soft
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips

For vanilla custard:

  • 1 cup milk
  • 2 egg yolks
  • ¼ cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter

Instructions
  

Activate the Yeast

  • Mix warm milk, sugar and yeast in a bowl. Let it rest for five minutes. It should look foamy.

Prepare the Dough Base

  • Add eggs, vanilla and salt to the yeast mixture. Mix gently until smooth and combined.

Add the Flour

  • Slowly add flour. Mix until a soft dough forms. The dough should look sticky and smooth.

Add Butter Slowly

  • Add soft butter little by little. Mix until fully absorbed into the dough.

Knead the Dough

  • Knead for eight minutes by hand or mixer. The dough should feel soft and elastic.

First Rise

  • Cover the bowl with a towel. Let the dough rise for one hour in a warm place.

Make the Custard

  • Heat milk in a pan. Whisk yolks, sugar and cornstarch separately until smooth.

Cook the Custard

  • Add hot milk slowly to yolks. Return to pan. Cook until thick. Add vanilla and butter.

Cool the Custard

  • Remove from heat. Cover and cool completely before using.

Add Chocolate Chips

  • Punch down the dough. Gently mix in chocolate chips evenly.

Shape the Brioches

  • Divide dough into balls. Flatten each ball and add custard in the center.

Seal and Shape

  • Close the dough around custard. Shape into smooth balls.

Second Rise

  • Place on baking tray. Cover and rise for 30 minutes until puffy.

Bake the Brioches

  • Bake at 180°C for 22–25 minutes until golden and fluffy.

Cool and Serve

  • Cool slightly. Serve warm for best taste and texture.
