Ingredients
  

For the Crust:

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons melted butter

For the Filling:

  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1/2 cup sour cream
  • 1/2 cup melted semi-sweet chocolate cooled
  • Green food coloring optional

For Chocolate Ganache:

  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions
  

Preheat the Oven

  • Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line bottom with parchment paper.

Prepare the Crust

  • Mix chocolate cookie crumbs, sugar, and melted butter in a bowl until combined evenly.

Press and Bake Crust

  • Press crumb mixture firmly into pan bottom. Bake 10 minutes, then cool while preparing filling.

Beat Cream Cheese

  • In a large bowl, beat softened cream cheese until smooth and creamy without lumps.

Add Sugar and Flavoring

  • Add sugar, vanilla extract, and peppermint extract. Beat gently until fully blended and smooth.

Add Eggs Slowly

  • Add eggs one at a time. Mix on low speed to avoid adding too much air.

Add Chocolate and Cream

  • Fold in melted chocolate and sour cream. Add green coloring if desired. Mix until smooth.

Pour Filling into Pan

  • Pour cheesecake batter over cooled crust. Smooth the top with a spatula evenly.

Bake the Cheesecake

  • Bake 50–55 minutes until edges are set but center slightly jiggles when gently shaken.

Cool Slowly

  • Turn off oven and leave cheesecake inside with door slightly open for one hour.

Chill Completely

  • Remove cheesecake and refrigerate at least 4 hours or overnight for best texture.

Prepare Ganache

  • Heat heavy cream until simmering. Pour over chocolate chips. Let sit two minutes, then stir smooth.

Top with Ganache

  • Pour ganache over chilled cheesecake. Spread evenly and let set before slicing.

Slice and Serve

  • Remove cheesecake from pan. Slice with clean knife for neat pieces and serve chilled.
