Ingredients
  

  • 3 medium potatoes peeled and chopped
  • 2 large leeks cleaned and sliced
  • 1 small onion chopped
  • 2 tbsp butter
  • 3 cups vegetable broth or chicken broth
  • 1 cup milk or light cream
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • Fresh parsley or chives for garnish

Instructions
  

Prepare the vegetables

  • Wash leeks well. Slice leeks, chop potatoes and onions. Keep everything ready before cooking.

Melt the butter

  • Place a large pot on medium heat. Add butter and let it melt gently.

Cook onion and leeks

  • Add onion and leeks to the pot. Cook slowly until soft and fragrant.

Add potatoes

  • Put chopped potatoes into the pot. Stir well to coat with butter.

Pour broth

  • Add vegetable or chicken broth. Make sure vegetables are fully covered.

Simmer the soup

  • Cover the pot. Let soup simmer for 25–30 minutes until potatoes are very soft.

Blend the soup

  • Use a blender or immersion blender. Blend until smooth and creamy.

Add milk and seasoning

  • Pour in milk, salt, pepper and garlic powder. Stir gently and heat again.

Taste and adjust

  • Taste the soup. Add more salt or pepper if needed.

Serve warm

  • Pour into bowls. Garnish with parsley or chives. Serve hot and fresh.

Notes

  • Use Yukon gold potatoes for extra creaminess.
  • Add cream instead of milk for richer texture.
  • Add a bay leaf while simmering for deeper flavor.
  • Blend only half for a chunky texture version.
