Ingredients
  

  • 1 cup 225g unsalted butter, softened
  • 1/2 cup 100g granulated sugar
  • 2 cups 250g all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups 180g sweetened shredded coconut
  • 1 1/2 cups 270g toffee bits
  • 1 teaspoon vanilla extract

Instructions
  

Preheat Oven

  • Preheat your oven to 350°F (175°C). Line a 9x13-inch pan with parchment paper. Leave extra for easy lifting.

Prepare the Shortbread Base

  • In a bowl, mix softened butter, sugar, flour and salt until smooth and slightly crumbly.

Press Into Pan

  • Press the dough evenly into the prepared pan using your fingers or spatula. Ensure it is compact and flat.

Bake the Base

  • Bake in preheated oven for 15 minutes or until lightly golden on the edges.

Add Toffee and Coconut

  • Remove from oven and sprinkle toffee bits and shredded coconut evenly on top. Press gently into the warm base.

Return to Oven

  • Bake for another 10 minutes or until the toffee is melted and the coconut is lightly toasted.

Cool Completely

  • Remove from oven and allow to cool completely on a wire rack. This helps the bars set properly.

Lift Out and Slice

  • Use the parchment paper to lift bars from the pan. Slice into squares or rectangles with a sharp knife.
