Ingredients
  

For the Cake

  • 2 cups grated carrots
  • 1 ½ cups all-purpose flour
  • 1 cup brown sugar
  • ½ cup white sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • ½ cup crushed pineapple drained
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 ½ teaspoons cinnamon powder
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ½ cup chopped walnuts

For the Cream Cheese Frosting

  • 200 g cream cheese
  • ½ cup butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions
  

Preheat the Oven

  • Preheat oven to 180°C. Line the cake pan with parchment paper.

Mix Dry Ingredients

  • In a bowl, mix flour, baking powder, baking soda, salt, cinnamon and nutmeg well.

Beat Eggs

  • Crack eggs into a bowl. Whisk until light and smooth.

Add Sugar

  • Add brown sugar and white sugar to eggs. Mix until creamy.

Add Oil

  • Pour oil slowly while mixing. Blend until smooth.

Add Vanilla

  • Add vanilla extract and mix gently.

Add Pineapple

  • Mix crushed pineapple into the batter slowly.

Add Carrots

  • Fold grated carrots into the mixture evenly.

Combine Dry Mix

  • Add dry ingredients slowly into wet mixture. Mix gently.

Add Nuts

  • Fold chopped walnuts into the batter.

Pour Batter

  • Pour batter into prepared cake pan. Level the top.

Bake Cake

  • Bake for 40 minutes. Check with toothpick for doneness.

Cool Cake

  • Remove cake from oven. Let it cool completely.

Make Frosting

  • Mix cream cheese and butter until smooth and creamy.

Add Sugar

  • Add powdered sugar slowly. Mix until fluffy.

Add Vanilla

  • Add vanilla extract to frosting and mix well.

Frost Cake

  • Spread frosting evenly on cooled cake.

Decorate

  • Add walnuts or carrot strips on top for decoration.

Rest Cake

  • Let cake rest for 20 minutes before slicing.
