Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 celery stalks diced
  • 4 cups chicken or vegetable broth
  • 1 cup ditalini pasta
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons fresh parsley chopped

Instructions
  

Heat Olive Oil

  • Warm olive oil in large pot over medium heat. Make sure it’s hot before adding vegetables.

Cook Onion and Garlic

  • Add chopped onion and garlic. Cook for 3–4 minutes until soft and fragrant.

Add Carrots and Celery

  • Stir in diced carrots and celery. Cook for another 5 minutes, stirring occasionally.

Pour Broth

  • Add chicken or vegetable broth. Bring to gentle boil over medium-high heat.

Add Herbs

  • Stir in thyme, basil, salt and pepper. Adjust seasoning as needed.

Cook Ditalini Pasta

  • Add ditalini pasta. Cook for 8–10 minutes until pasta is tender but firm.

Add Cream

  • Lower heat and stir in heavy cream. Mix until fully combined and smooth.

Add Parmesan Cheese

  • Stir in grated parmesan cheese. It will melt into the soup, giving rich flavor.

Final Taste

  • Taste and adjust salt and pepper. Add more herbs if desired.

Garnish and Serve

  • Ladle soup into bowls. Sprinkle chopped parsley on top before serving hot.
