Ingredients
  

For the Chicken:

  • 4 bone-in chicken thighs
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 2 cloves garlic minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • 1 teaspoon fresh parsley chopped

For the Carrots:

  • 3 medium carrots sliced
  • 1 teaspoon olive oil
  • Salt and black pepper

For the Mash:

  • 4 medium potatoes peeled and chopped
  • 2 tablespoons butter
  • 1/4 cup milk or cream
  • Salt and black pepper

Instructions
  

Preheat the Pan

  • Heat olive oil in a skillet over medium-high heat until hot.

Season the Chicken

  • Pat chicken thighs dry. Season with salt, pepper and garlic powder evenly.

Brown the Chicken

  • Place chicken skin-side down in skillet. Cook 5 minutes until golden. Flip and cook another 5 minutes.

Cook the Carrots

  • Toss sliced carrots with olive oil, salt and pepper. Roast in oven at 375°F for 20 minutes.

Make the Mash

  • Boil chopped potatoes in salted water for 15 minutes until tender. Drain well.

Mash the Potatoes

  • Add butter and milk. Mash until smooth and creamy. Season with salt and pepper.

Add Garlic to Chicken

  • Add minced garlic to skillet. Stir for 30 seconds until fragrant.

Add Chicken Broth

  • Pour chicken broth into pan. Scrape any browned bits from bottom for flavor.

Add Cream and Butter

  • Add heavy cream and butter. Stir gently. Simmer 5 minutes until sauce thickens.

Add Fresh Herbs

  • Sprinkle fresh parsley and thyme over chicken. Stir lightly to combine.

Plate the Dish

  • Place mashed potatoes on plate. Add roasted carrots. Place creamy chicken thighs on top.

Spoon Sauce Over

  • Drizzle creamy sauce over chicken and sides. Serve immediately while hot.
