Ingredients
  

  • 3 medium potatoes peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 4 small flour tortillas
  • Optional toppings: salsa sour cream, chopped cilantro, sliced green onions, fried eggs

Instructions
  

Prepare the Potatoes

  • Peel and dice potatoes into small cubes. Rinse and pat dry with paper towel.

Heat the Oil

  • In a large skillet, heat olive oil over medium heat. Make sure oil coats pan evenly.

Cook the Potatoes

  • Add diced potatoes to skillet. Spread in single layer. Cook for 10–12 minutes until golden, stirring occasionally.

Season the Potatoes

  • Sprinkle paprika, garlic powder, salt and black pepper. Stir well to coat evenly.

Add Cheese

  • Sprinkle cheddar and mozzarella over potatoes. Reduce heat to low. Cover to let cheese melt.

Prepare Tortillas

  • Warm flour tortillas in another skillet or microwave for 30 seconds. Keep soft for easy rolling.

Assemble Breakfast Tacos

  • Place cheesy potatoes onto each tortilla. Add optional toppings like salsa, sour cream, or fried eggs.

Fold and Serve

  • Fold tortillas to form tacos. Serve immediately while crispy and cheesy.
