Ingredients
  

  • 1.5 pounds 700 g baby potatoes, washed and halved
  • 4 slices bacon chopped
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley chopped for garnish (optional)

Instructions
  

Preheat the Oven

  • Set your oven to 425°F (220°C) to get it ready for roasting the potatoes.

Prepare the Potatoes

  • Cut baby potatoes in half. Keep the pieces roughly the same size for even cooking.

Season the Potatoes

  • In a large bowl, add olive oil, garlic powder, smoked paprika, salt and pepper. Toss potatoes well.

Add Bacon

  • Add chopped bacon to the bowl. Mix gently so bacon spreads evenly over the potatoes.

Arrange on Baking Sheet

  • Place potatoes and bacon cut side down on a baking sheet in a single layer. Avoid overcrowding.

Roast the Potatoes

  • Put the tray in the oven. Roast for 25 minutes or until golden brown and crispy.

Add Honey

  • Remove the tray from oven. Drizzle honey over potatoes and toss gently to coat them evenly.

Finish Roasting

  • Return tray to oven. Roast for another 5–10 minutes. Watch closely so honey does not burn.

Garnish and Serve

  • Sprinkle chopped parsley if desired. Serve hot for best flavor and crispiness.
