Ingredients

For the Cake:

  • cups all-purpose flour
  • teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • ½ cup milk

For the Creamy Filling:

  • 1 cup heavy cream
  • 4 oz cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries

For the Frosting and Decoration:

  • 1 cup heavy cream
  • ½ cup powdered sugar
  • Fresh raspberries for topping
  • Optional: mint leaves or edible flowers

Instructions

Preheat Oven

  • Preheat oven to 350°F (175°C). Grease and line cake pans with parchment paper to prevent sticking.

Mix Dry Ingredients

  • In a bowl, sift flour, baking powder and salt. Set aside. This ensures even texture in the cake.

Cream Butter and Sugar

  • In a separate bowl, beat butter and sugar until light and fluffy, about 3–4 minutes using a mixer.

Add Eggs and Vanilla

  • Add eggs one at a time. Mix well after each addition. Stir in vanilla extract for flavor.

Combine Wet and Dry

  • Add flour mixture alternately with milk. Begin and end with flour. Mix until smooth but do not overmix.

Divide Batter

  • Pour batter evenly into prepared cake pans. Smooth tops with a spatula for even baking.

Bake the Cake

  • Bake for 22–25 minutes. Insert a toothpick in the center; it should come out clean.

Cool the Cake

  • Remove from oven. Let cakes cool in pans 10 minutes, then transfer to a cooling rack completely.

Prepare Creamy Filling

  • Whip cream until soft peaks form. Beat cream cheese with powdered sugar and vanilla. Fold whipped cream gently.

Layer the Cake

  • Place one cake layer on a plate. Spread half of the creamy filling evenly. Add fresh raspberries.

Add Second Layer

  • Place second cake layer on top carefully. Spread remaining cream filling evenly over the top and sides.

Chill the Cake

  • Refrigerate for at least 30 minutes. This helps frosting set and makes slicing easier.

Decorate

  • Top with fresh raspberries. Optionally add mint leaves or edible flowers for presentation.

Serve

  • Slice with a sharp knife. Serve chilled for best flavor. Enjoy the rich, creamy, and fruity dessert.

Notes

  • Use room-temperature ingredients for smoother cake batter.
  • Chill the cake between layers for easier frosting.
  • Substitute cream cheese with mascarpone for richer flavor.
  • Add a thin layer of raspberry jam for extra sweetness.
  • Use chocolate shavings or drizzle on top for extra decoration.
  • Make mini cupcakes instead of a large cake for portion control.
  • Use frozen raspberries if fresh ones are unavailable; thaw and drain first.
