Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ¾ cup warm milk
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • ½ cup crumbled feta cheese
  • 2 tablespoons cream cheese optional for extra creaminess
  • 4 eggs
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley optional garnish

Instructions
  

Prepare the Dough

  • Add flour, yeast, sugar, and salt to a bowl. Mix well. Pour warm milk and olive oil. Stir until a soft dough forms.

Knead the Dough

  • Place dough on a floured surface. Knead for about eight minutes. The dough should become smooth, soft and slightly elastic.

Let the Dough Rise

  • Place dough in a greased bowl. Cover with a towel. Let it rest in a warm place for 30 minutes.

Prepare the Cheese Filling

  • In a bowl, mix mozzarella, feta and cream cheese. Stir well until evenly combined and creamy.

Preheat the Oven

  • Preheat your oven to 220°C (425°F). Line a baking tray with parchment paper.

Divide the Dough

  • Punch down the risen dough. Divide it into four equal pieces. Roll each piece into an oval shape.

Shape the Boat

  • Fold the long edges inward. Twist the ends to create a boat shape. Leave space in the center for cheese.

Add the Cheese Filling

  • Fill the center of each dough boat with the cheese mixture. Spread evenly but leave a small space.

Bake the Khachapuri

  • Place the tray in the oven. Bake for about 12 minutes until the bread becomes golden.

Add the Egg

  • Remove the tray briefly. Crack one egg into the center of each Khachapuri. Return to oven for 3–4 minutes.

Finish with Butter

  • Remove from oven. Place a small piece of butter on the hot cheese and egg center.

Garnish and Serve

  • Sprinkle chopped parsley on top. Serve immediately while the cheese is hot and stretchy.

Notes

  • Use mozzarella and feta together for the best balance of creamy and salty flavor.
  • Let the dough rest properly for a softer bread texture.
  • Do not overcook the egg. A slightly runny yolk tastes best.
  • Add garlic butter on the crust for extra flavor.
  • Try adding spinach or herbs to the cheese mixture.
  • Use whole wheat flour for a healthier version.
  • Add shredded cheddar for a stronger cheese flavor.
  • Serve with chili flakes for a spicy kick.
