  • 2 tablespoons olive oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 cups cabbage shredded
  • 1 14-ounce can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • Salt to taste
  • Fresh parsley for garnish

Instructions
  

Prepare the Barley

  • Rinse barley under cold water. This removes excess starch and helps keep the soup clear.

Cook the Base

  • Heat olive oil in a large pot. Add onion and garlic. Cook for 3–4 minutes until soft and fragrant.

  • Add carrots and cabbage. Cook for 5 minutes until slightly softened and well combined.

Add Barley and Spices
