  • 6 –8 Medjool dates pitted and chopped
  • 1/4 cup shaved Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional: 2 tablespoons toasted walnuts or almonds

Instructions
  

Prepare the Celery

  • Wash celery stalks. Trim ends and thinly slice into bite-sized pieces.

Chop the Dates

  • Pit the dates if needed. Chop them into small pieces for even distribution.

Shave the Parmesan
