Ingredients
  

  • 4 cups fresh spinach washed and chopped
  • 1 cup crumbled feta cheese
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 4 large eggs
  • ½ cup milk
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg optional
  • 1 tablespoon olive oil or butter
  • ½ cup shredded mozzarella cheese for topping optional

Instructions
  

Preheat the Oven

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or butter to prevent sticking.

Cook the Onion and Garlic

  • Heat olive oil in a skillet over medium heat. Sauté onions and garlic until soft and fragrant.

Add Spinach

  • Add chopped spinach to the skillet. Cook until wilted, stirring occasionally to release moisture.

Remove Excess Liquid

  • Drain any extra liquid from the spinach mixture to prevent a watery casserole. Let it cool slightly.

Prepare Egg Mixture

  • In a mixing bowl, whisk eggs, milk, salt, pepper and nutmeg until smooth and well combined.

Combine Spinach and Feta

  • Add cooked spinach, onion and crumbled feta to the egg mixture. Stir gently until evenly mixed.

Transfer to Baking Dish

  • Pour the mixture into the prepared baking dish. Spread it evenly using a spatula or spoon.

Add Topping

  • Sprinkle shredded mozzarella or extra feta on top for a golden finish, if desired.

Bake the Casserole

  • Bake in the preheated oven for 25–30 minutes until the casserole is set and lightly golden on top.
  • Rest and Serve
  • Allow the casserole to cool for five minutes before slicing. Serve warm as a main or side dish.

Notes

  • Use fresh spinach for best flavor. Frozen spinach works but squeeze out extra moisture first.
  • Add cooked mushrooms or bell peppers for extra vegetables.
  • Substitute feta with goat cheese or ricotta for a different taste.
  • Add cooked quinoa or rice for a heartier casserole.
  • Sprinkle paprika or chili flakes on top for added flavor.
  • For a lighter version, use low-fat milk and reduce cheese.
  • Serve with a dollop of Greek yogurt for extra creaminess.
