Ingredients
  

  • 500 grams boneless chicken thighs finely chopped
  • 3 cloves garlic minced
  • 2 red chilies finely sliced
  • 1 small onion sliced
  • 1 red bell pepper sliced
  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon fish sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1 cup fresh Thai basil leaves
  • Cooked jasmine rice for serving

Instructions
  

Prepare the Chicken

  • Finely chop the chicken thighs using a sharp knife. Small pieces cook faster and absorb more flavor.

Mix the Sauce

  • In a small bowl, combine soy sauce, oyster sauce, fish sauce, sugar and black pepper.

Heat the Pan

  • Place a wok or skillet on high heat. Add vegetable oil and heat until hot but not smoking.

Cook Garlic and Chilies

  • Add minced garlic and sliced chilies. Stir quickly for 30 seconds until fragrant but not burned.

Add the Chicken

  • Add chopped chicken to the hot pan. Stir fry quickly and break apart any large pieces.

Cook Until Done

  • Cook chicken for about 5 minutes. Stir constantly until chicken is fully cooked and lightly browned.

Add Vegetables

  • Add sliced onion and bell pepper. Stir fry for two minutes until slightly soft but still crisp.

Pour the Sauce

  • Pour prepared sauce into the pan. Stir well to coat chicken evenly with rich flavor.

Add Thai Basil

  • Turn off heat and add fresh Thai basil leaves. Stir gently until leaves wilt slightly.

Serve Immediately

  • Serve hot over jasmine rice. Add a fried egg on top for extra traditional touch.
