Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup fresh spinach chopped
  • ½ cup shredded cheddar cheese
  • ½ cup milk
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp paprika optional
  • 1 tbsp olive oil or butter for greasing

Instructions

Preheat the oven

  • Set your oven to 375°F (190°C). Grease an 8x8-inch baking dish with olive oil or butter.

Sauté onion and garlic

  • Heat a small pan with olive oil. Add onion and garlic. Cook until soft and fragrant.

Prepare the spinach

  • Add chopped spinach to the pan. Sauté until wilted. Remove from heat and set aside.

Mix eggs and milk

  • In a large bowl, whisk together eggs, milk, salt, pepper and paprika until smooth and uniform.

Add cottage cheese

  • Stir in cottage cheese and shredded cheddar. Mix gently to combine without breaking the curds.

Combine spinach mixture

  • Add the sautéed spinach, onions and garlic into the egg mixture. Stir evenly for consistent flavor.

Pour into baking dish

  • Transfer the mixture into the greased baking dish. Spread evenly for uniform cooking.

Bake the casserole

  • Place in preheated oven. Bake for 30–35 minutes until eggs are set and the top is lightly golden.

Cool slightly before serving

  • Let the casserole rest for 5 minutes. This helps it hold its shape when cutting.

Serve warm and enjoy

  • Cut into squares and serve with toast, fresh fruit, or your favorite breakfast sides.

Notes

  • Use low-fat or full-fat cottage cheese depending on your preference.
  • Add bell peppers or mushrooms for extra flavor and nutrients.
  • Sprinkle parmesan cheese on top for a richer taste.
  • Make it ahead: Assemble the casserole the night before and bake in the morning.
  • For a keto-friendly version, skip milk and use heavy cream instead.
