Ingredients
  

  • 1 1/2 lb pork tenderloin
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon Dijon mustard

Preheat Oven

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.

Prepare Herb Mixture

  • In a bowl, mix olive oil, garlic, rosemary, thyme, parsley, salt, pepper, paprika and Dijon mustard until combined.

Trim Pork

  • Trim any silver skin from pork tenderloin. Pat dry with paper towels for better searing.

Coat Pork

  • Rub herb mixture evenly over the pork. Press gently so herbs stick well.

Sear Pork

  • Heat a skillet over medium-high heat. Sear pork on all sides for 2–3 minutes until golden brown.

Bake Pork

  • Transfer pork to prepared baking sheet. Bake for 18–22 minutes until internal temperature reaches 145°F (63°C).

Rest Meat

  • Remove pork from oven. Let it rest for 5–10 minutes before slicing. This keeps juices inside.

Slice and Serve

  • Slice pork into thick pieces. Serve warm with your favorite side dishes.

  • Use dried herbs if fresh are not available. Use half the amount.
  • Add lemon zest for a fresh citrus flavor.
  • Brush honey on top before baking for slight sweetness.
