Ingredients
  

For the cookies:

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped pecans toasted

For the frosting:

  • 1 cup powdered sugar
  • 2 tablespoons unsalted butter softened
  • 1 –2 tablespoons milk
  • ½ teaspoon vanilla extract
  • Optional: finely chopped pecans for garnish

Instructions
  

Preheat Oven

  • Preheat oven to 175°C or 350°F. Line baking sheets with parchment paper or silicone mats.

Toast Pecans

  • In a dry skillet, toast chopped pecans over medium heat until fragrant. Set aside to cool.

Cream Butter and Sugars

  • In a mixing bowl, beat softened butter, brown sugar and granulated sugar until light and fluffy.

Add Eggs and Vanilla

  • Beat in eggs one at a time, then add vanilla extract. Mix until fully combined.

Mix Dry Ingredients

  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet mixture.

Add Pecans

  • Fold in toasted pecans gently until evenly distributed throughout the dough.

Scoop Cookies

  • Use a spoon or cookie scoop to place dough onto prepared baking sheets. Leave space for spreading.

Bake the Cookies

  • Bake for 12–15 minutes or until edges are lightly golden. Do not overbake for soft cookies.

Cool Slightly

  • Allow cookies to cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Prepare Frosting

  • In a small bowl, mix powdered sugar, softened butter, milk and vanilla until smooth. Adjust thickness if needed.

Frost the Cookies

  • Spread frosting on slightly warm or fully cooled cookies. Sprinkle with additional chopped pecans if desired.

Notes

  • Use room temperature butter for soft, tender cookies.
  • Chill dough for 15–30 minutes for thicker cookies.
  • Add a pinch of cinnamon to dough for extra flavor.
