Ingredients
  

  • 4 corn cobs or 3 cups corn kernels
  • 2 tablespoons olive oil or butter
  • 1/3 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese or feta
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt to taste
  • Juice of 1 lime
  • Fresh cilantro chopped

Instructions
  

Prepare the Corn

  • Remove husks and silk from corn cobs. Rinse well. Pat dry with a clean towel.

Heat the Pan

  • Place a pan on medium heat. Add olive oil or butter. Let it heat gently.

Cook the Corn

  • Add corn to the pan. Cook until lightly charred. Turn often for even color.

Cut the Corn

  • Remove corn from heat. Let cool slightly. Cut kernels off the cob carefully.

Make the Sauce

  • In a bowl, add mayonnaise and sour cream. Mix until smooth and creamy.

Add Seasoning

  • Add chili powder, paprika, salt and lime juice. Stir well until combined.

Mix Corn and Sauce

  • Add warm corn kernels to the sauce. Mix gently until fully coated.

Add Cheese

  • Add crumbled cheese to the bowl. Stir lightly to avoid breaking the kernels.

Garnish

  • Sprinkle chopped cilantro on top. Add extra chili powder if desired.

Serve Fresh
