Ingredients
  

  • 2 ribeye steaks about 1-inch thick
  • 2 tablespoons olive oil
  • 3 cloves garlic crushed
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 tablespoons unsalted butter
  • Salt and freshly ground black pepper

Instructions
  

Prepare the Steaks

  • Take the steaks out of the fridge. Let them sit at room temperature for 30 minutes. Pat dry with paper towels.

Season the Steaks

  • Generously season both sides with salt and black pepper. Press the seasoning gently into the meat.

Preheat the Skillet

  • Place the cast iron skillet on high heat. Let it get very hot for about 5 minutes.

Add Oil to Skillet

  • Pour olive oil into the skillet. Swirl it around to coat the bottom evenly.

Sear the Steaks

  • Place steaks in the hot skillet. Sear for 2–3 minutes without moving. Flip carefully with tongs.

Add Butter and Herbs

  • Add butter, garlic, rosemary and thyme to the skillet. Spoon melted butter over steaks while cooking.

Cook to Desired Doneness

  • For medium-rare, cook 3–4 minutes per side. Adjust time for thicker steaks or preferred doneness.

Check Temperature

  • Use a meat thermometer: 125°F for rare, 135°F medium-rare, 145°F medium.

Rest the Steaks

  • Remove steaks from skillet. Place on a plate and cover loosely with foil. Rest 5–10 minutes.

Serve and Enjoy

  • Slice against the grain. Spoon garlic and herb butter from skillet over steaks. Serve immediately.

Notes

  • Use High Heat: Make sure the skillet is very hot to get a crispy crust.
  • Room Temperature Steak: Let steak sit outside the fridge for even cooking.
  • Butter Basting: Always spoon butter over steak during the last few minutes for extra flavor.
  • Try Different Herbs: Thyme, rosemary, or sage all work well.
