Ingredients
  

  • 2 cups fresh red radishes thinly sliced
  • 1 small cucumber thinly sliced
  • 1/4 small red onion very thinly sliced
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons fresh dill chopped
  • 1/4 cup feta cheese crumbled
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions
  

Wash the Vegetables

  • Wash radishes and cucumber under cold water. Pat them dry with a clean kitchen towel before slicing.

Slice the Radishes

  • Cut off the tops and roots. Slice radishes into very thin rounds using a sharp knife.

Slice the Cucumber

  • Slice cucumber into thin rounds. If seeds are large, remove them before slicing for better texture.

Prepare the Onion

  • Slice red onion very thinly. If it tastes too strong, soak slices in cold water for five minutes.

Make the Dressing

  • In a small bowl, add lemon juice, olive oil and honey. Whisk well until fully combined and smooth.

Add Seasoning

  • Add salt and black pepper to the dressing. Taste and adjust seasoning if needed.

Combine Vegetables

  • Place radishes, cucumber and onion in a large mixing bowl. Toss gently to mix evenly.

Add Fresh Herbs

  • Sprinkle chopped parsley and dill over the vegetables. Mix lightly for even distribution.

Pour the Dressing

  • Pour dressing over the salad. Toss gently so every slice gets coated with flavor.

Add Feta Cheese

  • Sprinkle crumbled feta on top. Do not overmix after adding cheese to keep texture nice.

Rest the Salad
