Ingredients
  

  • 500 g boneless chicken cut into bite-sized pieces
  • 2 medium onions sliced
  • 2 medium bell peppers red or green, sliced
  • 3 large tomatoes chopped
  • 3 cloves garlic minced
  • 1- inch piece of fresh ginger grated
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili powder adjust to taste
  • Salt to taste
  • Fresh coriander leaves chopped, for garnish

Instructions
  

Marinate the Chicken

  • Mix chicken pieces with half of the turmeric, salt and chili powder. Set aside for 10 minutes to absorb the flavors.

Heat the Oil

  • In a large frying pan, heat vegetable oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.

Cook Onions

  • Add sliced onions to the pan. Cook until soft and lightly golden, about 5–7 minutes, stirring occasionally.

Add Garlic and Ginger

  • Stir in minced garlic and grated ginger. Cook for 1–2 minutes until fragrant, being careful not to burn them.

Add Chicken

  • Add the marinated chicken to the pan. Cook until the pieces are lightly browned, about 5–6 minutes.

Add Spices

  • Sprinkle in ground coriander, remaining turmeric and garam masala. Stir well to coat the chicken evenly with spices.

Add Peppers

  • Add sliced bell peppers to the pan. Cook for 5 minutes, keeping them slightly crunchy for texture.

Add Tomatoes

  • Stir in chopped tomatoes. Simmer gently for 10 minutes until the sauce thickens and the chicken is cooked through.

Check Seasoning

  • Taste the Jalfrezi and add salt or chili powder if needed. Mix well before removing from heat.

Garnish and Serve

  • Sprinkle freshly chopped coriander leaves over the Jalfrezi. Serve hot with rice or naan bread.
