Ingredients
  

  • 2 medium zucchini
  • 2 eggs
  • 1/3 cup whole wheat flour
  • 1/4 cup grated parmesan cheese
  • 2 garlic cloves minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 2 tablespoons fresh parsley chopped
  • Olive oil for cooking

Instructions
  

Grate the zucchini

  • Grate zucchini using a grater. Place in a bowl.

Remove water

  • Wrap zucchini in a towel. Squeeze hard to remove water.

Add eggs

  • Crack eggs into zucchini. Mix gently until combined.

Add garlic

  • Add minced garlic. Stir gently for even flavor.

Add dry ingredients

  • Add flour, parmesan, salt, pepper, paprika and oregano. Mix well.

Add herbs

  • Add fresh parsley. Mix gently to combine.

Heat oil

  • Heat olive oil in pan. Use medium heat.

Form fritters

  • Scoop mixture. Shape into small flat patties.

Cook first side

  • Place fritters in pan. Cook three minutes until golden.

Flip fritters

  • Flip gently. Cook other side until crisp.

Drain oil

  • Place cooked fritters on paper towel to absorb oil.

Serve warm

  • Serve warm with yogurt sauce or salad.
